Guilt Free Nut Bars

I’m an early riser and often wake up and want breakfast. By mid-morning I fancy a snack and with a busy schedule I used to find myself grabbing what I thought was a healthy snack but so many shop bought nut bars are overloaded with added sugar. After much trial and error, I invented these delicious nut bars. I use a dark chocolate called ‘Montezuma’s Absolute Black which only contains 3g sugar per 100g!

The method

1. Chop 1 ½ cups nuts and add to bowl; I like using walnuts and almonds. Add ½ cup oats, ½ cup desiccated coconut, 1 tbsp of avocado/ olive oil, 1 large tbsp peanut butter; I avoid peanut butters with added ingredients. Waitrose Duchy range sells one with only two ingredients- peanuts and salt. Add a tbsp of date syrup or honey and mix well

2. For those with a sweet tooth like myself I grate 4 cubs of Montezuma chocolate and 1 tbsp of raisins to the bowl

3. Add 1 tsp of vanilla essence and mix

4. Place greaseproof paper in a rectangular dish and spoon ingredients into the dish. Using the back of the spoon push the ingredients down to ensure it is compact.

5. Place the dish in the freezer and it’s ready in half an hr. I leave this in the freezer and it’s scrummy.
